Mari Ruddy, health, wellness and fitness blogger, just shared one of her favorite recipes with the Type 2 Nation community. These gluten-free muffins call for garbanzo bean flour (aka chickpea flour), which is high in fiber, protein, and folate and low in calories. Besides being a delicious baked good, the soluble fiber found in this garbanzo bean flour can help a bit in blood sugar regulation.
Garbanzo Bean Flour Muffins
Prep Time: 10 minutes
Cooking Time: 20 to 25 minutes
Yield: 12 Regular Sized Muffins
Ingredients
1/2 cup garbanzo bean flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/4 teaspoon ginger
2 eggs
1 can pureed sweet potato
1 cup almond butter or peanut butter
1/4 cup chopped pecans
1/2 cup craisins or other dried berries
1/4 cup maple syrup or you could use 1/8 cup of stevia sweetener
Preparation:
- Preheat oven to 350°.
- Mix everything together.
- Spoon into muffin tray.
- Bake 20 to 25 minutes or until lightly browned, and a toothpick comes out clean.
- Store in the refrigerator.
