Grilled Fruit Dippers
Enjoy almost any summer fruit hot off the grill. Use firm fruits, as softer fruits can turn mushy. Serve the fruit kabobs with this creamy, low-sugar dip, or on top of frozen vanilla yogurt.

Ingredients:
Dippers
8 4-inch bamboo skewers
8 medium strawberries
8 1-inch cubes fresh pineapple
8 1-inch wedges nectarine
8 1-inch chunks peeled kiwi fruit
Creamy Vanilla Dip
1 8-ounce container vanilla-flavored light yogurt
1 snack-size vanilla-flavored, sugar-free refrigerated pudding (about 106 g or 3¾ ounces)
½ teaspoon vanilla extract (optional)
Preparation:

- At least 30 minutes before grilling, soak bamboo skewers in water.
- Preheat gas grill to medium for direct grilling. Alternately thread different fruits on bamboo skewers, leaving 1⁄4 inch between pieces.
- Grill fruit, uncovered, for 2 to 3 minutes or until heated through, turning occasionally. Serve with small individual cups of Creamy Vanilla Dip.
Creamy Vanilla Dip
- Combine all ingredients in small bowl. If desired, cover and refrigerate for up to 1 day. Makes about 1 cup.
